Heat coconut oil in a pan on medium heat. (you can use coconut oil or any vegetable oil of your choice)
Add cumin seeds, allow them to sizzle.
Add green chilies and onion, sauté until onion translucent.
Add chopped tomatoes, sprinkle a pinch of salt over them, cover and cook on low heat until tomatoes soft & mushy.
Add turmeric powder, sauté and add the grated paneer, stir to combine, cover and cook for 2-3 minutes until paneer soft.
Taste for salt and adjust if necessary.
Garnish with cilantro and serve warm (drizzle a bit of lime juice if you like before serving) with chapatis/rotis or add it to your toast. Enjoy!
