CHICKPEA AVOCADO SALAD 🥗

Serves: 1

1 cup of white chickpeas, cooked with a tsp of salt
1 medium Avocado, cut into cubes
1/4 cup of red onion, sliced
1/2 cup of Roma tomato, diced
1/4 cup of grated carrot
1/4 cup homegrown sprouts of @naturejims salad mix seeds (alfalfa, radish, broccoli, clover)
Green chilies to taste, finely chopped
Cilantro, chopped
Salt to taste
Crushed black pepper to taste
Lemon juice, a generous drizzle

Toss everything together in a bowl and enjoy!

METHI MATTAR PULAO - The one-pot weekend meal you didn’t know you needed.😋

Serves: 3

Ingredients:
1.5 cups of Jeera samba rice
2.5 cups of water
2 cups of fresh methi/fenugreek leaves, washed thoroughly
1 cup of frozen green peas
2 tablespoons of cold-pressed peanut oil
1 tablespoon of ghee
1 medium red onion, sliced
1 small vine/globe tomato
Salt to taste
Lemon juice

Green masala paste:
4-5 green chilies
3-4 stalks of mint
10-12 stalks of coriander leaves
4 cloves of garlic
3/4 inch of ginger root
Water

2.5 teaspoons of Biryani Masala Powder: (The recipe is my reels)

➡️ Heat oil & Ghee in a pressure cooker on medium heat.
➡️ Add and Sauté onion until light brown.
➡️ Add and sauté the green paste on low heat until oil separates.
➡️ Add biryani powder, and sauté for a couple of seconds.
➡️ Add in chopped tomato and cook until soft.
➡️ Add methi leaves, salt and green peas. Sauté and partially cook for a couple of minutes.
➡️ Add white rice, water and lemon juice.
➡️ Allow the mixture to come to a boil. Taste for salt and adjust.
➡️ Cover the lid and pressure cook until 2 whistles. Then allow the pressure to release naturally.
➡️ Gently mix and serve with raita. Enjoy!

Coconut Chutney 🥥

Serves: 3-4

Ingredients:
1/2 cup of fresh coconut, cubed
1/4 cup of roasted split chickpeas(bengal gram)
1 teaspoon cumin seeds
1/2 teaspoon black peppercorns
2-3 Green chilies or to taste
1 inch ginger root
A small marble sized tamarind
4-5 stalks of coriander leaves
Water as required
Salt to taste

🥥 Blend all the above ingredients into a paste of required consistency.

Seasoning:
2 tablespoons of peanut oil
1/4 teaspoon mustard seeds
1/2 teaspoon urad dal
A pinch of hing
5-6 curry leaves

🥥 heat oil in a small pan. Once hot, add urad dal and fry until golden brown. Then add mustard seeds, once it pops, add hing and curry leaves.
🥥 Then off the heat and Pour this seasoning over the chutney, give it a mix and serve with idli, dosa and poori. Enjoy!

Biryani Masala

If you are someone like me who uses whole spices to make biryani/pulao but aren’t a fan of finding it while relishing the dish, this spice mix is for you(and your fam)!😊

Ingredients:
1 teaspoon cloves
2 inches of cinnamon
3-4 small bay leaves
5-6 Bydagi dried chili
2 teaspoons black peppercorns
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 teaspoon green cardamom
2, star anise
1/2 teaspoon mace
3 teaspoon coriander seeds
1 teaspoon black stone flower
1/4 nutmeg
2 black cardamom
15-20 cashews

➡️ Dry roast all the ingredients in a skillet/pan on low heat for a couple of minutes until aromatic.
➡️ Turn off the heat, and allow Ingredients to cool down.
➡️ Blend into a fine powder.

Use as needed(2 tablespoons for 1 cup of white rice is what I use) in biryanis and pulao, and store it for up to 2 weeks. Enjoy!

Palak Paneer Bhurji Toast😋

These toasts are easy yet nutritious, making them a great lunch option on your busy days!

Ingredients:
1 tablespoon Ghee
1/2 teaspoon cumin seeds
1 small red onion, finely chopped
1/4 teaspoon turmeric powder
1/4 teaspoon cumin powder
1 teaspoon coriander powder
3/4 teaspoon garam masala
3/4 teaspoon Kashmiri red chili powder
1 small globe tomato, chopped
Salt to taste
150g of Panner, thickly grated
1/2 teaspoon crushed black pepper
5-10 leaves of Spinach, chopped
Multigrain and seed bread, toasted

• Heat ghee in a cooking pan.
• Add cumin seeds
• Add onion, sauté and cook until light brown
• Add all the spices
• Add chopped tomato and salt, and cook until soft.
• Add the grated Panner, combine, and cook on low heat for about 5 minutes until Panner is cooked and soft.
• Add spinach, combine, and cook for a minute or two.
• Serve immediately on a toast and enjoy it with a generous drizzle of lemon.

* Don’t forget to warm paneer bhurji (to soften it) right before you eat.

Multigrain Chapati with Carrot Greens/tops🥕

Did you know that carrot greens are not only edible but also nutritious? They have an earthy flavor and taste a bit cilantro-ey.

I find carrot greens great for garnishing toasts curries, and salads. But they also taste great when added in chapati/paratha like this.

Ingredients:
1 cup of Multigrain flour
1/4 tsp carom seeds
A pinch of turmeric powder
1/2 tsp red chili powder
1/4 tsp cumin powder
A pinch of salt
2 tsp olive oil
Carrot greens/tops of 2 medium carrots, rinsed & finely chopped
Warm water as required to make dough

🫓 Mix all the ingredients to make a firm dough. 🫓Brush oil on the dough, let it sit for 5-10 minutes.
🫓Roll the dough into chapatis. Cook on a tawa on both sides until well done by smearing ghee on both sides.
🫓Serve with pickles, plain yogurt and dal. (I used leftover spinach dal instead) Enjoy!

QUINOA UPMA - Crunchy, healthy and yummy 🤤

Ingredients:
1/2 cup quinoa, rinsed
2 cups of water
1 tablespoon coconut oil
1 1/2 tablespoon ghee
1/4 cup jumbo groundnuts
1 tablespoon cashews
1/2 teaspoon mustard seeds
1/4 teaspoon grated ginger
5-6 curry leaves
1/4 teaspoon turmeric powder
2 medium carrots, peeled and cut into 1/4 inch pieces
1/2 cup of green peas, frozen
Salt to taste
Crushed black pepper to taste
Coriander leaves, finely chopped
1/4 cup of grated coconut
Lemon juice

• Heat oil and ghee in a cooking pot.
• Add groundnuts and cashews, and fry them until golden brown.
• Add mustard seeds. Once they pop, add grated ginger, curry leaves, and turmeric powder. Sauté for a couple of seconds.
• Add carrots, green peas, salt, black pepper, and water. Cover and cook the vegetables for 3-4 minutes on medium heat.
• Add quinoa, water, coconut, and coriander leaves. Allow the mixture to come to a boil.
• Cover and cook on medium heat for 15 minutes until quinoa has cooked and there’s no water left.
• Turn the heat off and allow it to rest for 5 minutes.
• Drizzle lemon juice before serving. Enjoy!

Here’s a photo/video dump of some delicious homemade goodies from last week.😋

2. Banana pepper and onion Bajjis (I could not resist making bajjis after seeing a recent post by @rujuta.diwekar )
3. Rice with black-eyed peas curry and ghee
4. Avocado toast with salt, crushed black pepper and lemon seasoning
5. Avocado chapati with black-eyed peas curry, and cucumber.
🥑 I had come across numerous posts about avocado chapatis on Instagram, but I was hesitant to try it because I don't particularly like cooking fruits. Then I researched online and learned that they may lose some nutritional value when cooked, but it's totally ok to cook them. So I made avo chapatis with just half of a fully ripened avocado. They came out tasty and SO soft!
6. My kind of Tacos 🌮🤪 with whole wheat chapati, leftover chickpeas usli, onion, green chilies, coriander leaves, mayonnaise, and sriracha sauce.

GREEN GRAM MILLET PONGAL/ KHICHADI

If you're looking for a tasty and healthy sattvic meal, try this easy one-pot pongal recipe, perfect for lunch or dinner.

We have two days a week dedicated to sattvic meals here, which means no chili, onion, garlic, hing, and other negative pranic foods. This Pongal recipe is a perfect fit for those days.

Ingredients:
1 cup of green gram, soaked overnight
3/4th cup of little millet, thoroughly rinsed
3 1/2 cups of water
2 tbsp ghee
1/2 tsp mustard seeds
1/2 tsp cumin seeds
5-6 curry leaves
1/4 tsp grated ginger
1/2 tsp turmeric powder
Black pepper powder to taste
Salt to taste
5-10 cashews, fried in ghee

Heat ghee in a pressure cooker. Add mustard and cumin seeds, and allow them to pop and sizzle. Keeping the heat on low, add curry leaves and grated ginger. Then add turmeric powder and black pepper powder. Sauté for a couple of seconds and add little millet, green gram with salt to taste, and water.

Allow the mixture to come to a boil. Cover and pressure cook for 4-5 whistles or until ingredients are soft. Once the pressure releases naturally, gently mash the Pongal, adjust salt and consistency to your liking by adding water. Cook on medium heat for a couple of minutes and turn off heat.

Lastly, fry some cashews in a tbsp of ghee and add them along with ghee into khichadi for that crunch.

Serve it warm and enjoy!

Masala Puffed Rice/ Spicy Murmura

I absolutely love Masala Puffed Rice as a snack during tea time. It was one of my favorite childhood snacks, especially when my ajji made it(we call it puri oggarane). She also makes a sweet version using flattened rice (Avalakki), which is just as tasty.🤌

This snack can be prepared in less than five minutes, provided you have all the ingredients. Once it’s done, let it cool and then store it in an airtight container for up to a month to keep it fresh.

Ingredients:
4 cups of puffed rice
1/4 cup of peanuts
1/4 cup of roasted Bengal gram
3-4 dried red chilies, split into halves
3 tbsp peanut/coconut oil
1/2 tsp mustard seeds
8-10 curry leaves
1/2 tsp turmeric powder
1 tsp red chili powder
Salt to taste

Heat oil in a wide pan on medium heat. Add peanuts and roasted Bengal gram, and fry them until golden brown. Then add mustard seeds, allow them to pop, then add dried red chilies and curry leaves. (you can add 2-3 garlic cloves too here and fry them until they are light brown)

Turn off the heat and add turmeric powder, chili powder, and salt. Sauté for a couple of seconds, then add puffed rice and combine until the spices evenly coat the puffed rice.

Serve with Indian tea, or enjoy it as is as a snack.
