Soya Mince Fried rice

Ingredients
  

  • 2-3 tbsp oil
  • 1/2 cup chopped onion
  • 1 cup green peas + chopped carrots
  • 1 cup soya chunks mince soaked in hot water for 10 minutes, squeezed, drained, and minced/pulsed in a blender. Check details under instructions.
  • 2 cups cooked rice
  • handful of chopped scallions
For the sauce mix:
  • 2 tbsp tomato ketchup
  • 1 tsp soy sauce
  • 2 tbsp teriyaki sauce
  • 1 tsp garlic powder
  • Black pepper powder to taste
  • salt

Method
 

Mince Soya chunks
  1. Soak soya chunks in double the amount of hot water in a bowl for 10 minutes.
  2. Once they plump up, discard the soaked water, then squeeze the soya chunks in your palm and remove excess water.
  3. Transfer the soya chunks to a blender and pulse 2-3 times until the soya chunks are minced.
  4. Transfer the soya mince to a bowl and keep it aside.
Make the sauce mix:
  1. Add all the ingredients listed under sauce mix to a bowl, mix well, and keep aside.
Make fried rice:
  1. Heat oil in a medium-sized skillet/pan on medium heat.
  2. Add chopped onions, green peas, and carrots, and sauté for a few minutes until the veggies are partially cooked.
  3. Add the soya mince, followed by the sauce mix, and stir well.
  4. Add the cooked rice (either freshly cooked or leftover) and scallions. Stir-fry for a few minutes on medium heat.
  5. Taste for seasonings and adjust if necessary.
  6. Serve healthy and delicious soya mince fried rice with your favorite sauce or any side dish of choice. Enjoy!

Notes

  • Feel free to include more variety of vegetables. Bell peppers, broccoli, spinach, kale, corn, flat beans, green beans go well in this recipe.
  • Adjust sauces and seasonings as per your taste.
