This is what I often do: I alternate between using soya chunks and eggs depending on what I have on hand or what my family prefers on that particular day.

Method
- Soak soya chunks in double the amount of hot water in a bowl for 10 minutes.
- Once they plump up, discard the soaked water, then squeeze the soya chunks in your palm and remove excess water.
- Transfer the soya chunks to a blender and pulse 2-3 times until the soya chunks are minced.
- Transfer the soya mince to a bowl and keep it aside.
- Add all the ingredients listed under sauce mix to a bowl, mix well, and keep aside.
- Heat oil in a medium-sized skillet/pan on medium heat.
- Add chopped onions, green peas, and carrots, and sauté for a few minutes until the veggies are partially cooked.
- Add the soya mince, followed by the sauce mix, and stir well.
- Add the cooked rice (either freshly cooked or leftover) and scallions. Stir-fry for a few minutes on medium heat.
- Taste for seasonings and adjust if necessary.
- Serve healthy and delicious soya mince fried rice with your favorite sauce or any side dish of choice. Enjoy!
