This lychee ice cream is a delicious summer treat, made with healthy ingredients. It’s easy to prepare, and in just a few hours, you can enjoy it with family and friends at any summer gathering.
It is fantastic dessert for get-togethers and can be made when you have friends and relatives over. The recipe is straightforward, and you can get creative by adding your favorite toppings.

Lychee Ice Cream
Ingredients
- 25-30 fresh lyhees
- 1/4 tsp cardamom powder
- 1/3 cup coconut cream
- 2 mejdhool dates de-seeded
Instructions
- Prep Lychees: wash lychees thoroughly with water, remove the skin and seeds, and transfer the pulp into a blender jar.
- Add to it – cardamom powder, coconut cream, and deseeded mejdhool dates.
- Blend until smooth. Then transfer the liquid into an airtight bowl or tub (or even a popsicle mold), and freeze for a few hours (4-6 hours) to attain a scoopable texture.
- Add your favorite toppings of chopped nuts (I have used chopped pistachios and walnuts) and a few saffron strands, and enjoy!
Notes
- You could add small chunks of lychees into the liquid before freezing if you like.
- You could add other toppings such as honey, chopped seeds (pumpkin, melon, sunflower), or dried berries too.
- You could skip adding the dates altogether if you prefer just the natural sweetness of lychees.
- You could also replace dates with raw honey or any other sweetener of your choice.
