Mattar Paneer - so easy, so delicious and so an under 30 minutes recipe!😋

🌿150g paneer cubes
🌿100g frozen green peas
🌿3 tbsp cooking oil
🌿 1/2 tsp cumin seeds
🌿 1/4 tsp turmeric powder
🌿 1 1/2 tsp Kashmiri red chili powder
🌿 1 tbsp coriander powder
🌿 1/4 tsp cumin powder
🌿 1/2 tsp garam masala
🌿 a handful Kasuri methi, crushed
🌿 salt as per taste

Blending:
🌿1 small red onion, roughly chopped
🌿1 medium tomato, roughly chopped
🌿3 cloves of garlic
🌿1/4 inch ginger
🌿3 green chilies or to taste

Add all the blending ingredients into a mixer jar and make a smooth paste.

Heat oil on low heat. Add cumin seeds, turmeric powder, Kashmiri red chili powder, cumin & coriander powder, and garam masala. Sauté for a few seconds on low heat and add the onion-tomato paste. Add just about 50ml of water and salt, cover & cook on low-medium heat until oil separates.

Add green press, adjust curry consistency if required by adding water. Cover & cook for 2-3 min. Add paneer cubes, cover and cook for another 4-5 min until paneer soft. Add crushed kasuri methi. Enjoy with naan, roti or flavored rice!❤️

AIR-FRIED BEETS
Tried this version of beets during the last holiday season and it was an instant hit. It’s sweet, mildly spicy, garlicky, well-cooked & full of flavor!😋

🌿1 medium beetroot, skin-peeled & cut into 1/2 inch-ish slices as shown
🌿1 tbsp olive oil
🌿Salt as per taste
🌿Black pepper powder as per taste
🌿1/2tsp Garlic powder

Prep beets as shown. Add beet slices, olive oil, salt, pepper and garlic powder into a mixing bowl, and toss to coat.

Preheat air fryer at 390F. Add seasoned beets into air basket and cook at 390F for 10 minutes, tossing half way through. Garnish with cilantro and serve as is or with your favorite dip. Enjoy!❤️

VERMICELLI KHEER
An oldie but a Goldie. Also, our favorite homemade Indian dessert.❤️

Ingredients:
150g semiya/ vermicelli
750ml whole milk
100g sugar(or to taste)
3-4 tablespoons of ghee
2 green cardamom, crushed
A pinch of saffron strands
5-10 almonds
5-10 cashews

Directions:
🤍In to a pan, add ghee and fry dry fruits on low heat until light brown, then transfer them onto a plate.
🤍Add vermicelli into the same pan, fry for a minute.
🤍Pour whole milk into the pan. Cook on low-medium heat while stirring continuously until vermicelli softens, and the milk reduces and begins to thicken.
🤍Add cardamom & sugar, combine and cook for 3-4 minutes.
🤍Stir in fried dry fruits. Serve kheer warm or chilled. Enjoy!🥰

Here’s the egg masala recipe from last week - Spicy and tangy curry made with hard-boiled eggs cooked in an onion-tomato-spices base. So next time you crave eggs, you know what to make!😉

Ingredients:
5 Eggs, hard-boiled, de-shelled and cut into two halves
3-4 tablespoons of cooking oil
½ teaspoon cumin seeds
2-3 Green chilies, slit
1 medium onion, finely chopped
5-6 curry leaves
1 tablespoon ginger garlic paste
2 tomatoes(tangy ones)
3-4 dried red chilies, soaked in water for 15 minutes, and drained
1 teaspoon red chili powder
1 ½ teaspoon coriander powder
½ teaspoon garam masala
Water
Cilantro, finely chopped
Salt to taste

Quick recipe: Blend tomatoes, dried red chilies into a smooth paste & keep aside. In a pan, heat oil, add cumin seeds, green chilies, curry leaves, onion, and sauté until onion light browned. Add ginger-garlic past, sauté until the raw smell goes away. Pour the tomato-chili paste into the pan, sprinkle a pinch of salt, mix well and cook on medium heat until you see oil separating. Add all the powdered spices and sauté for 30 seconds. Pour water to adjust the consistency of the curry, Mix and cook for another 3-4 minutes. Taste for salt, adjust if necessary. Add the eggs at this point, gently mix and cook for 2 minutes. Garnish with cilantro and serve yummy egg masala with rotis or chapatis. Enjoy!

Easy-peasy okra stir fry with onion, garlic, curry leaves, grated coconut, and spices. Perfect with chapati or alongside rice-sambar/dal.

Ingredients:
150g okra/Bhindi, washed and cut into 1-inch pieces
4 tbsp cooking oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1-2 garlic cloves, minced
1 small red onion, chopped
8-10 Curry leaves
1/2 tsp turmeric powder
1 tsp red chili powder
1.5 tsp coriander powder
Salt to taste
3 tbsp grated coconut

Directions:
💚 Stir fry okra in a non-stick pan with 2 tbsp of oil & a tsp of salt until okra browned & sticky substance gone. Transfer onto a plate.
💚 Heat 2 tbsp oil in the same pan.
💚Add mustard seeds, cumin seeds, curry leaves, minced garlic, onion and sauté until onion translucent.
💚 Add salt, turmeric powder, red chili powder, coriander powder, sauté on low heat for 30 seconds.
💚 Add stir fried okra into the pan. Mix & cook on high heat for 2 minutes.
💚Add coconut, mix, sauté for a minute. Taste for salt & adjust.
💚 Serve with chapati or alongside rice-sambar/dal. Enjoy!🥰

Ingredients:
3 tablespoons cooking oil/Ghee
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1/4 teaspoon grated ginger
1/2 teaspoon black peppercorns
2 green chillies, split into halves
8-10 curry leaves
A pinch of hing
10-15 Cashews
200g Broken wheat, rinsed
100g split mung, rinsed
1/4 teaspoon turmeric powder
1 litre of water
Salt to taste

Directions:
1. Heat oil in a pressure cooker.
2. Add mustard & cumin seeds, allow them to pop and sizzle.
3. Add grated ginger, black peppercorns, green chilies, curry leaves, and a pinch of Hing.
4. Add cashews, fry until light brown.
5. Transfer broken wheat & split mung into the pressure cooker.
6. Add salt to taste, turmeric powder, sauté for a minute.
7. Pour water, allow the mixture to come to a boil.
8. Pressure cook on medium heat until broken wheat well cooked(around four whistles).
9. Gently mash Pongal, add hot water to adjust consistency if necessary.
10. Taste for salt and adjust. Serve warm broken wheat Pongal in a bowl. Enjoy!

Ingredients:
200g of button mushrooms, sliced
2 medium green capsicum, diced
3-4 tbsp of cooking oil
½ tsp cumin seeds
Whole spices (2 green cardamoms, ¼ inch cinnamon, 2 cloves,½ bay leaves)
Green chilies to taste, slit into half
1 medium red onion, finely chopped
1 tbsp ginger-garlic paste
1 medium tomato, grated or made into a paste
Spice powders (¼ tsp turmeric powder, 2 tsp of coriander powder, ¾ tsp cumin powder, ½ tsp garam masala)
Salt to taste
Cilantro, for garnish
Water

Procedure:
1. Heat oil in a medium-size pan.
2. Add cumin seeds and whole spices, sauté on low heat until aromatic.
3. Add green chilies and onion, sauté until onion translucent.
4. Add ginger-garlic paste, sauté for a minute.
5. Add tomato paste, sprinkle a pinch of salt over, cover and cook until the oil starts separating.
6. Add all the spice powders, sauté on low heat for 30 seconds.
7. Transfer mushrooms and capsicum into the pan, saute for a minute, pour water as per desired consistency, cover, and cook on medium heat for 5 minutes or until the curry thickens.
8. Taste for salt and adjust if necessary.
9. Garnish with chopped cilantro.
10. Serve delicious mushroom capsicum masala with rotis/chapati. Enjoy!

Ingredients:
200g paneer, cubed
3 tbsp canola oil
1 tbsp minced garlic
Green chilies to taste, slit
1 small onion, diced
1 small bell pepper, diced
2 tbsp tomato ketchup
2 tsp soy sauce
2 tbsp sriracha sauce
1 tbsp corn flour mixed in 3 tbsp water
Salt to taste
3 tbsp spring onion, chopped
Cilantro

Marinade:
2 tbsp corn flour
2 tbsp rice flour
1/2 tsp salt
1 tsp Red chili powder
1/2 tsp Black pepper powder
Water as required
2 tbsp oil

Directions:
💥 Mix the marinade ingredients into a thick, lump free marinade. Add paneer cubes into it, coat them well and let them sit for 5 minutes.
💥Preheat air fryer at 370F.
💥Place marinated paneer cubes in the tray, and air fry for 9-10 minutes at 370F. Shake and spray oil halfway through.
💥Heat oil in a pan/wok. Sauté garlic, green chilies, then add onion and bell pepper, cook on high heat until charred.
💥Add all the sauces, mix well.
💥Pour the corn flour mixture, mix well until the sauce becomes thick.
💥Transfer air fried paneer into the pan/wok, and combine well.
💥Taste for salt, adjust if needed.
💥Garnish chili paneer with spring onions and cilantro.
💥Serve hot. Enjoy!

Sprouted the black chickpeas for the first time last week to make this BOMB curry. It’s vegan, healthy and so delicious! Here’s the recipe.🥰

Ingredients:
3 tbsp of cooking oil
1/2 tsp mustard seeds
2 tbsp chopped onion
one sprig of curry leaves
150g sprouted black chickpeas/kadalekalu
1 large potato, skin-peeled & diced
3-4 tbsp of cilantro, chopped
Water

For the masala paste:
2 tbsp of cooking oil
1 small onion, diced
1 medium tomato, diced
2 green chilies or to taste
3-4 dried red chili (Byadagi), for color
3 cloves
½ inch cinnamon
4-5 cloves of garlic
½ inch ginger
1 tsp fennel seeds
1 tsp poppy seeds
3 tbsp of grated coconut
2 tbsp of fresh cilantro
½ tsp red chili powder
¼ tsp turmeric powder
1 tbsp coriander powder
Salt to taste

Directions:
🔥 Masala paste: Sauté dried red chilies, cloves, cinnamon, fennel seeds, poppy seeds in oil for 20 seconds. Add ginger, garlic, onions, sauté until onion translucent. Add tomatoes, sauté until soft. Turn off heat & let these ingredients cool, then transfer into a mixer jar & add grated coconut, coriander powder, turmeric powder, red chili powder, salt to taste, water, blend the ingredients into a fine masala paste.
🔥Heat oil in a pressure cooker
🔥Add mustard seeds, curry leaves, & chopped onion, sauté for 30 seconds.
🔥Pour the masala paste into the pressure cooker, mix well, sauté for 2 minutes on low-medium heat.
🔥 Add sprouted black chickpeas, diced potatoes, and cook them for a minute or two.
🔥Pour water as required(as per consistency), mix well, allow the mixture to come to a boil on medium heat.
🔥Taste for salt, adjust if necessary.
🔥Pressure cook on low-medium heat until five whistles, or until chickpeas are is soft and cooked perfectly.
🔥Garnish with chopped cilantro, serve sprouted black chickpeas curry with steamed white rice, millets, quinoa, or Ragi mudde. Enjoy!

Whole spices( 1 tsp fennel seeds, 3 cloves, 5 green cardamom, 2 black cardamom, 1/2 inch cinnamon, mace, 2 star anise, 2 bay leaves)
1 medium onion, chopped
Green chilies to taste, slit
1 tbsp ginger-garlic paste
2 medium tomatoes, chopped
4 tbsp cilantro, chopped
3 tbsp mint, chopped
1/2 tsp turmeric powder
1 tsp Kashmiri red chili powder
1 tbsp coriander powder
3/4 tsp garam masala
Lime juice
Taste to salt

Next time, don’t think twice before using red radishes in place of white radishes in your 🍅 Dal/sambar, cause it’s a total winner.💯 I used them along with potatoes for the first time tonight and the dal tasted SO delicious!

Here’s a quick recipe - save it & try it, if you haven’t already.🥰

Recipe:
⭐️Pressure cook toor dal, and the veggies - red radish & potatoes, separately. Mash dal later & keep side.
⭐️Heat oil in a cooking pot. Add mustard seeds, cumin seeds, dried & split red Chilies, a pinch of hing, and curry leaves.
⭐️Add minced ginger, minced garlic, chopped onions, sauté until onions translucent. Add tomatoes, sauté until soft & mushy.
⭐️Add salt to taste, turmeric powder and red chili powder, sauté for 30 seconds then add tamarind pulp to taste, mix.
⭐️Transfer cooked dal plus the veggies into the cooking pot &
pour water to adjust consistency. Allow the dal to come to a boil.
⭐️Garnish with cilantro. Serve red radish & potato dal with white rice and pickles/ghee. Enjoy!😋
