Little millet bisi bele bath - a wholesome and del

Little millet bisi bele bath - a wholesome and delicious breakfast/ lunch meal made with little millet, toor dal, vegetables, tamarind, and spices.😋

You’d need:

To pressure cook:
1/4 cup little millet
1/4 cup toor dal
3/4 cup of green beans, chopped into ½ inch length
1/2 cup green peas 3/4 cup carrot, chopped 1 tbsp peanut/cooking oil
1 1/2 cup water

For BBB masala: 3 tbsp peanut oil
2-3 tbsp ghee  1/2 tsp mustard seeds 1/2 tsp cumin seeds A pinch of Asafoetida(hing) 2-3 dried red chilies 1 medium onion, chopped 1 medium tomato, chopped
1/2 tsp turmeric powder 3/4 tsp Kashmiri red chili powder 2 tbsp of MTR Bisi bele bath powder 2 tbsp of tamarind extract
A handful of chopped cilantro  Salt to taste
a handful of Peanuts
5-10 Cashews

* Pressure cook the ingredients mentioned above under the pressure cook section until Dal and millets are cooked. Allow pressure to release naturally, then gently mash and keep aside.
* Prepare a seasoning of mustard seeds, cumin seeds, dried red chili, and hing in oil and a tbsp of ghee.
* Add onion, sauté until translucent, then add tomatoes and cook them until soft.
* Add salt, turmeric powder, red chili powder, and BBB powder. Sauté on low heat for a few seconds and add the tamarind extract. Cook for a minute or two and finish with cilantro.
* Mix this masala with pressure-cooked millet and dal. Adjust salt and consistency(by adding water) and cook on low heat for a couple of minutes.
* Fry peanuts and cashews in ghee until light brown, add it to bisi bele bath, and gently mix. Serve warm with chips/mixture/curd and cucumber. Enjoy!

SAUTÉED RADISH GREENS WITH SPLIT CHICKPEAS

Sharing this nutritious and tasty side dish I made recently with radish greens and soaked split chickpeas. Super easy to make and so so yummy!

You would need:
2 small bunches of radish greens, cleaned and chopped
4 tbsp of split chickpeas, soaked for 4 hours and drained
2 tbsp peanut oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
a pinch of hing
2 dried red chilies, split
2 cloves of garlic, sliced or minced
Salt to taste

• Heat oil in a cooking pan on medium heat.
• Add mustard seeds and cumin seeds, allow them to pop and sizzle.
• Add garlic, dried red chilies, curry leaves and hing. Sauté for a few seconds.
• Add split chickpeas, sauté for a few seconds.
• Add chopped radish greens, sauté until well-cooked
• Season with salt.
• Serve on the side with your meal. Enjoy!

On the plate are Broccoli, Bell peppers, Mushrooms(a medley of shiitake, brown beech, and oyster mushrooms), Japanese sweet potato, and garlic sautéed in olive oil, garnished with spring onions, and seasoned with salt, crushed black pepper, and lemon.

SWEET RAVE GANJI On days when I feel like eating/

SWEET RAVE GANJI

On days when I feel like eating/drinking something warm and light for my brunch, ganji is what I prefer.
It takes just 15 minutes to prepare, making it an excellent option for a quick breakfast too.

Also, it’s a good meal for when you are feeling under the weather that some even funnily refer to ganji as the ‘Patient’s food’.😁

Here’s how I make it:
* I’m not someone who enjoys milk in ganji, but you could add a quarter cup of boiled milk(regular or vegan) just before adding jaggery.*

Ingredients:
2 tbsp fine rava
1 1/2 cup of hot water
1 crushed cardamom or a pinch of cardamom powder
3 tbsp powdered jaggery(to taste)
Almond shavings

• Dry roast fine rava on low heat until aromatic.
• Add hot water and allow rava to cook and thicken on low heat, while stirring continuously
• Add cardamom (crushed or powdered)
• Add jaggery to taste, stir and cook for 2-3 minutes on low heat until thick but runny
• Garnish with almond shavings and serve warm

AMARANTH WITH BLACK CHICKPEA STIR-FRY, also known as Dantu Soppina Palya in Kannada, is a simple yet flavorful and nutritious side dish.

You could eat it with literally with any of your meals or just by itself.❤️

Ingredients
1 cup black chana soaked overnight & cooked
1 bunch amaranth cleaned & chopped
2 tbsp peanut oil
½ tsp cumin seeds
A pinch of hing
1 small red onion chopped
2 cloves garlic chopped
2 dried red chilies
¼ tsp turmeric powder
a handful of shredded coconut
Salt to taste

Heat oil in pan.

Add cumin seeds and allow them to sizzle. Add hing, dried red chilies, and garlic, sauté until garlic brown and aromatic.

Add chopped onion, sauté until translucent. Add turmeric powder, chopped amaranth and stir fry until amaranth is cooked. Add cooked black chana, and salt. Stir to combine. Finish off with grated coconut.

Enjoy on the side with rice-sambar/dal or as is!

🌱Simple and comforting SPINACH DAL

Ingredients:
1 cup of cooked toor dal
1 box of baby spinach, chopped
2-3 tbsp peanut oil
1/4 tsp mustard seeds
1/2 tsp cumin seeds
2-3 dried red chilies, split
A pinch of hing
2 garlic cloves, pounded or chopped
Slit green chilies to taste
1 small red onion, chopped
1 large tomato, chopped
1/2 tsp turmeric powder
Water
Salt to taste
Lemon

Pressure cook a cup of toor dal, mash it and keep it ready.

Heat oil in a cooking pot. Add mustard seeds and cumin seeds, dried red chilies and hing. Add and sauté garlic until aromatic.

Add green chilies, chopped onion - sauté until onion translucent. Then add chopped tomatoes, sprinkle some salt over it, cover and cook until soft. Add turmeric powder, sauté for a couple seconds and add in chopped spinach. Stir fry until spinach soft and cooked.

Pour cooked dal, add water to adjust consistency. Adjust salt if necessary and bring spinach Dal to a boil. Continue cooking for 2-3 min more until thick and frothy. Turn off and drizzle juice of half a lemon.

Enjoy with rice, dosa, or drink like soup with toasted bread on the side!

CABBAGE PAKODA

It’s raining pakodas here this winter and I’m not complaining!😋

We used mint chutney(from previous night’s takeout) and homemade veggie dal as accompaniments to these yummy cabbage pakodas, and the combo tasted delicious!

Here’s how I made it:
#saveitforlater

Ingredients
🥬1 small cabbage, finely chopped
🥬1 small red onion, finely chopped
🥬a few finely chopped curry leaves
🥬a handful of chopped cilantro
🥬1/4 inch ginger, chopped
🥬1/4 tsp ajwain
🥬1/2 tsp turmeric powder
🥬2 tsp Kashmiri red chili powder
🥬salt to taste
🥬1 tsp fine Sooji rava
🥬2 tbsp rice flour
🥬4 tbsp gram flour
🥬water

For deep-frying:
🥬cold-pressed peanut oil

Add all the pakoda mixture ingredients(other than water) into a mixing bowl and combine well.

Add water in small amounts and combine to make a thick mixture. Cover and let it rest for 10 minutes.

Check back to see if the mixture has released any water. If so, add a tablespoon more of gram flour and combine again.

Heat oil in a frying pan. Take small quantities of the pakoda mixture in a table spoon, carefully drop them one by one into the hot oil. Deep fry until golden brown. Remove excess oil using tissue.

Enjoy them with mint chutney or your fav dip.

🌿Pepper Rasam and steamed rice with peppered button mushrooms

I’m definitely taking advantage of the last few days of winter but hey who doesn’t love a warm and comforting bowl like this one any day!🤗

Pepper Rasam Recipe:
Make a paste of 2 tsp cumin seeds, 1 tsp black pepper corns, 1 green chili, and 2 garlic cloves.

Heat 3 tbsp peanut oil in a cooking pot. Add 1/4 tsp mustard seeds, dried red chilies, curry leaves and a pinch of hing. Add and cook 1 large chopped tomato along with salt to taste and a pinch of turmeric until tomatoes are soft. Add the cumin-pepper-green chili-garlic masala and cook for a minute. Pour about 2 tbsp tamarind extract followed by 500ml of water and bring it a boil. Let it cook for a couple more minutes. Finish by adding chopped cilantro. Enjoy with steamed rice!🔥

GREEN GRAM CURRY
Re-sharing this delicious green gram curry recipe as a reel because it’s worth it!😋

Soak a cup of green gram for 6 hours.

Heat 2 tbsp peanut oil in a pressure cooker. Add 1/2 tsp cumin seeds, 2 cloves of crushed garlic, 2 slit green chilies and a small chopped onion. Sauté until onion turns slightly brown, then add 1/4 tsp turmeric powder, 1 tsp Kashmiri red chili powder and 1/2 tsp garam masala. Sauté for a few seconds and add a large chopped tomato along with salt. Cover and cook until tomato soft and mushy.

Add soaked & drained green gram along with 2 cups of water. Once the mixture comes to a boil, add a handful of chopped cilantro and pressure cook for two whistles. Gently mash once the pressure naturally releases.

Finish with a tempering of- 2 tbsp ghee, mustard seeds, hing, dried red chilies and a few curry leaves.

Pour this over the curry and serve with chapati/roti. Enjoy!

Green gram dosa - crispy, healthy and tasty!😋

1 cup of green gram
1/4 cup of rice
3/4 cup of water
2-3 green chilies
1/4 inch ginger
Salt to taste
Ghee

Soak green gram and rice overnight. Drain water and grind the soaked ingredients along with ginger, green chilies, salt and water to a smooth batter.

Transfer the batter into a bowl, let it sit for about 15 minutes.

Heat tawa on low-medium heat. Take a ladle full of batter and make dosa as shown, smearing a tsp of ghee on it. Serve with your choice of chutney or chutney pudi.Enjoy!

Cooked Ridge Gourd Stir-fry/ Heerekayi Palya after a long time. So easy to make and so tasty with rice and Dal or rasam.😋

Heat 3 tbsp cooking oil in a pan. Pop 1/4 tsp mustard seeds, fry 1/4 tsp each of chana dal and urad dal until golden brown, split and add dried red chili, a clove of minced garlic, a few curry leaves and a small chopped white onion. Sauté until onion translucent, then add 1/4 tsp turmeric powder and stir.

Add 1 medium, cleaned & chopped ridge gourd and sprinkle salt to taste. Stir and cover and cook on low-medium heat for 5-6 minutes or until 90% cooked, stirring occasionally. Garnish with 2 tbsp of shredded coconut. Enjoy!😋

COCONUT RICE 🌴🍚

Don’t worry about that extra dabba of white rice you get with your takeouts anymore! Save this recipe and make coconut rice with it the next time😉

The white rice I’ve used in this recipe is from our takeout recently, and it’s mildly(almost zero) flavored. But plain rice works best for this recipe.

🌿1 bowl of cooked rice(200g approx)
🌿4 tbsp coconut oil
🌿1/4 tsp mustard seeds
🌿1/2 tsp chana dal
🌿1/4 tsp urad dal
🌿1 dried red chili
🌿a sprig of curry leaves
🌿1 small red onion, finely chopped
🌿1/2 cup shredded coconut
🌿1/2 tsp black pepper powder
🌿Salt to taste
🌿3 tsp peanuts, fried in ghee

Heat oil in skillet. Pop mustard seeds, and fry chana dal and urad until golden brown. Break dried chili and add them, along with curry leaves.

Add chopped onion and sauté until translucent, then add shredded coconut, leftover rice, salt to taste and black pepper powder. Combine well, allowing it to cook for 3-4 min on medium heat.

Lastly, add fried peanuts and give everything a good mix. Enjoy crunchy and delicious coconut rice with coconut chutney/ pickles or as is!😋

Crunchy Dill Vada - a very South Indian yummy snack with tea/coffee or a side for your meal!

🌿150g chana dal
🌿water
🌿Cooking oil
🌿1 garlic clove
🌿2 green chilies or to taste
🌿 a small cinnamon stick(1/4 inch)
🌿 3 cloves
🌿 1 small red onion, finely chopped
🌿 3-4 curry leaves, finely chopped
🌿 3 tbsp chopped dill
🌿 salt as per taste

Soak chana dal for an hour, drain water and transfer chana dal into a mixer jar. Add garlic, cinnamon, cloves and green chilies into the mixer jar and make a coarse paste.

Add chana dal paste, chopped red onion, curry leaves, dill and salt to taste into a mixing bowl and combine.

Heat oil on low-medium heat in a frying pan. Make small, medium-thick Patties and shallow fry on either side. Serve hot and crunchy dill vada with tea/coffee or on the side of your meal. Enjoy!😋

Mattar Paneer - so easy, so delicious and so an under 30 minutes recipe!😋

🌿150g paneer cubes
🌿100g frozen green peas
🌿3 tbsp cooking oil
🌿 1/2 tsp cumin seeds
🌿 1/4 tsp turmeric powder
🌿 1 1/2 tsp Kashmiri red chili powder
🌿 1 tbsp coriander powder
🌿 1/4 tsp cumin powder
🌿 1/2 tsp garam masala
🌿 a handful Kasuri methi, crushed
🌿 salt as per taste

Blending:
🌿1 small red onion, roughly chopped
🌿1 medium tomato, roughly chopped
🌿3 cloves of garlic
🌿1/4 inch ginger
🌿3 green chilies or to taste

Add all the blending ingredients into a mixer jar and make a smooth paste.

Heat oil on low heat. Add cumin seeds, turmeric powder, Kashmiri red chili powder, cumin & coriander powder, and garam masala. Sauté for a few seconds on low heat and add the onion-tomato paste. Add just about 50ml of water and salt, cover & cook on low-medium heat until oil separates.

Add green press, adjust curry consistency if required by adding water. Cover & cook for 2-3 min. Add paneer cubes, cover and cook for another 4-5 min until paneer soft. Add crushed kasuri methi. Enjoy with naan, roti or flavored rice!❤️

AIR-FRIED BEETS
Tried this version of beets during the last holiday season and it was an instant hit. It’s sweet, mildly spicy, garlicky, well-cooked & full of flavor!😋

🌿1 medium beetroot, skin-peeled & cut into 1/2 inch-ish slices as shown
🌿1 tbsp olive oil
🌿Salt as per taste
🌿Black pepper powder as per taste
🌿1/2tsp Garlic powder

Prep beets as shown. Add beet slices, olive oil, salt, pepper and garlic powder into a mixing bowl, and toss to coat.

Preheat air fryer at 390F. Add seasoned beets into air basket and cook at 390F for 10 minutes, tossing half way through. Garnish with cilantro and serve as is or with your favorite dip. Enjoy!❤️
