This recipe yields perfectly roasted, flavorful Gobi that you can enjoy as a snack with your favorite dipping sauce—our top choice is ranch. Alternatively, you can serve it as a side dish alongside rice and dal for an extra kick of spice.

Ingredients

  • 1 medium cauliflower
  • 3 tbsp olive oil/cold-pressed peanut oil
  • 1/4 tsp turmeric powder
  • 1 tsp Kashmiri red chili powder
  • Crushed black pepper
  • 1 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/4 tsp garam masala
  • a sprig of curry leaves
  • 1 tbsp white corn flour
  • 3 tbsp rice flour
  • salt to taste

Directions

  1. Prep Cauliflower: Cut the cauliflower into small, bite-sized florets. Soak them in water with some salt and turmeric powder. Keep them in the water for about 10 minutes to get rid of all the dirt. Then rinse them well and transfer them to a large mixing bowl.
  2. Mix and Toss: Into the mixing bowl, add all the spices – turmeric powder, kashmiri red chili powder, cumin and coriander powder, garam masala, ginger and garlic powder. Then add curry leaves, corn flour, rice flour, olive oil, and salt. Toss to coat the florets with seasoning.
  3. Preheat Air Fryer: Preheat the air fryer to 375°F for 5 minutes.
  4. Add seasoned florets into air fryer basket: Line the air fryer basket with parchment paper, add and spread seasoned cauliflower florets evenly.
  5. Air Fry: Close and air fry at 375F for 13-15 minutes, depending on how roasted you would want the florets to be. Shake the basket halfway through.
  6. Serve: Serve yummy air-fried gobi with your favorite dipping sauce or alongside rice and dal. Enjoy!

Notes

Feel free to adjust the seasoning. You can do it even after the florets have been air-fried.
