Herbed Spinach Quinoa

Ingredients
- 1/2 cup white quinoa
- 1 1/2 cups of water, to cook quinoa
- 1-2 tbsp ghee
- some cashews
- 1/4 tsp mustard seeds
- a few curry leaves
- 1 small tomato, diced
- 1/4 tsp cumin powder
- 1/2 tsp garam masala
- salt
- For the green paste:
- Green chilies to taste
- 6-8 coriander stalks
- Some mint leaves
- Two handfuls of baby spinach
- water, enough to blend
Directions
- Cook Quinoa: Thoroughly rinse quinoa 2-3 times under cold running water. Transfer it into a cooking pot/rice cooker, add water and cook until done.
- Make the green paste: Add green chilies, coriander, and mint leaves, baby spinach, and water into a blender and make a smooth paste.
- Prepare herbed spinach quinoa: Heat ghee in a pan. Add and roast cashews until golden brown. Then add mustard seeds, and curry leaves. Once mustard seeds pop, add tomato and saute for a few seconds. Pour the green paste and saute on low heat until it thickens. Add salt, cumin powder, and garam masala and saute for another minute. Transfer cooked quinoa and mix well.
- Adjust seasoning: taste for salt and other seasonings, and adjust if necessary.
- Serve: Serve delicious herbed spinach quinoa with plain yogurt, topped with a pinch of chaat masala (optional) and cucumbers/salad of choice. Enjoy!
