If you are looking for a healthy side dish or a filling evening snack, this recipe is a great choice! Made with mung beans and moringa leaves, this stir-fry is a wholesome side dish. It uses just a few ingredients and is very easy to make.
Ingredients:
1 cup mung beans/ green gram/ hesarukalu
2 cups of Moringa/drumstick leaves
2 tbsp peanut oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
a pinch of hing
a few curry leaves
2 dried red chilies, split into halves
1 medium onion, chopped
1/2 cup frozen or freshly grated coconut
water to cook mung beans
salt to taste
Method:
- Wash mung beans and soak them in plain water overnight.
- Drain and add fresh water (approximately 3 cups or enough to cook mung beans) and half a tsp of salt and cook until mung beans well done yet firm.
- Drain and keep mung beans aside.
- Heat oil in a skillet on medium heat.
- Add mustard and cumin seeds, and allow them to pop and sizzle.
- Add hing, curry leaves, and dried red chilies.
- Add onion and saute until translucent.
- Add moringa leaves and saute for a couple of minutes until the leaves are partially cooked.
- Add cooked mung beans, grated coconut, and salt, and stir-fry on medium heat for a couple of minutes.
- Serve warm as a side dish or enjoy it as is!
