Mung beans & Moringa Stir-fry

If you are looking for a healthy side dish or a filling evening snack, this recipe is a great choice! Made with mung beans and moringa leaves, this stir-fry is a wholesome side dish. It uses just a few ingredients and is very easy to make.

Ingredients:

1 cup mung beans/ green gram/ hesarukalu
2 cups of Moringa/drumstick leaves
2 tbsp peanut oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
a pinch of hing
a few curry leaves
2 dried red chilies, split into halves
1 medium onion, chopped
1/2 cup frozen or freshly grated coconut
water to cook mung beans
salt to taste

Method:
  1. Wash mung beans and soak them in plain water overnight.
  2. Drain and add fresh water (approximately 3 cups or enough to cook mung beans) and half a tsp of salt and cook until mung beans well done yet firm.
  3. Drain and keep mung beans aside.
  4. Heat oil in a skillet on medium heat.
  5. Add mustard and cumin seeds, and allow them to pop and sizzle.
  6. Add hing, curry leaves, and dried red chilies.
  7. Add onion and saute until translucent.
  8. Add moringa leaves and saute for a couple of minutes until the leaves are partially cooked.
  9. Add cooked mung beans, grated coconut, and salt, and stir-fry on medium heat for a couple of minutes.
  10. Serve warm as a side dish or enjoy it as is!
