Are you looking for a delicious and nutritious side dish? Why not try this recipe for Red Chard and Horse Gram Stir Fry?

As someone who loves to create easy and wholesome side dishes for everyday meals, I highly recommend this recipe. It combines pulses and greens for a satisfying meal that can be prepared in less than 20 minutes with some meal prep. While I used horse gram in this recipe, feel free to substitute any type of lentils or pulses. If you choose to use pulses, be sure to soak and cook them separately before adding them to the recipe to reduce their gas-causing substances.

I always aim to incorporate locally grown and seasonal fruits and vegetables into my diet as much as possible. This recipe features locally grown fresh red chard, which adds an ultimate flavor.

Ingredients:

  • 1 cup horse gram
  • 1 bunch red chard
  • 2 tbsp cooking oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • green chilies to taste (slit)
  • ¼ tsp turmeric powder
  • salt to taste
  • lime juice as per taste

Method:

  1. Rinse and soak one cup of horse gram overnight. Drain and cook until tender.

  2. Rinse and roughly chop the red chard.

  3. Heat oil in a cooking pan.

  4. Add mustard seeds and cumin seeds, then sauté green chilies to taste with the chopped chard, turmeric powder and salt until cooked.

  5. Add the cooked horse gram, combine, and stir fry for 2-3 minutes.

  6. Drizzle some lime juice on top and enjoy this healthy stir fry with your meal.
