Homemade Biryani Masala

Attention all the biryani lovers!

This homemade Biryani Masala recipe is simple and can be prepared in under 10 minutes. It can be stored for up to 2 months in an air-tight container to maintain its aroma and freshness.

It consists of all the wonderful roasted whole spices as well as the secret ingredient, which is cashews.

I use this biryani masala at least once a week when I prepare vegetable biryani, and we love the flavor it imparts. Not limited to biryani, it can also enhance the taste of vegetarian or meat curries.

Ingredients:

2 inches Cinnamon
2 tablespoons of black peppercorns
15 Cloves
10 Green cardamom
1/4th Nutmeg
1 star anise
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1-inch mace
3 tablespoons coriander seeds
5 dried red chilies
1 teaspoon black stone flower
5 bay leaves
one handful of cashews

Instructions:

  1. Add all the ingredients in a wide bottom pan and dry roast everything on low heat until aromatic and lightly browned.
  2. Allow the ingredients to cool down.
  3. Transfer them to a mixer jar and blend to a smooth powder.
  4. Allow the powder to cool down, and then store it in an air-tight container.
  5. Use this aromatic homemade biryani masala for making biryanis and curries.
