This recipe is for all the one-pot meal lovers like me. I often cook for one, and lazy one-pot meals are my absolute favorite meals. Making a meal, especially in the rice cooker, is the most convenient way to cook, and I love it.
This quinoa-green peas one-pot recipe is simple, nourishing, and comforting. It’s delicious and toddler-friendly, and perfect for this fall season.
Ingredients:
Ghee or coconut oil: You can use either. I prefer ghee; it adds so much flavor!
Spices: You’ll need mustard seeds, turmeric powder, Kashmiri red chili powder, salt, coriander, and roasted cumin powder.
Herbs: Fresh Curry leaves and dried fenugreek leaves also called kasuri methi.
Quinoa: white quinoa is best for this. But if you have red or mixed quinoa, those work well too.
Vegetables: you’ll need onions, garlic, tomatoes, sweet potatoes, and green peas. You can use carrots instead of sweet potatoes.
For Serving: mint chutney, green yogurt, and chaat masala!
