This colorful stir fry with red Swiss chard and black chickpeas is a super tasty and healthy side dish that pairs well with just about any meal. It’s really easy to prepare and you can get it ready in under 30 minutes, especially if you do a bit of meal prep ahead of time, like soaking chickpeas overnight, washing and chopping the greens.
Not to mention, it’s a great way to sneak some greens and legumes into your meals. The seasoning is simple: just toss in some mustard seeds, cumin seeds in oil, a bit of dried red chili for some kick, and minced garlic and onions for that savory punch, along with a pinch of salt.
To top it off, add a cup of shredded coconut on there for a nice texture and drizzle generous amount of lemon that really brings everything together. This quick and delicious dish is bound to brighten up your dinner!
Yield: 2-3 adult servings
Ingredients:
Black chickpeas – 1 cup, soaked overnight and drained
Red Swiss chard – 1 bunch
Cold-pressed peanut oil – 2 tbsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
Chopped garlic cloves – 1 tbsp
A small chopped red onion
Fresh or frozen shredded coconut – 1/2 cup
Salt to taste
Lemon
Method:
- Boil soaked black chickpeas with salt in water until tender but firm. Drain and set aside.
- Heat oil in pan on medium heat.
- Add mustard seeds and cumin seeds, allow them to pop and sizzle.
- Add chopped garlic, sauté until aromatic, and then add in the chopped red onions, and sauté until translucent.
- Add chopped chard and sauté for a couple of minutes. Cover and cook until chard is well-cooked. Check and stir occasionally to prevent chard from getting burnt.
- Add the boiled chickpeas into the pan, sprinkle salt to taste over it and stir well to combine.
- Lastly, add the shredded coconut and combine.
Drizzle a generous amount of lemon on top before serving. Enjoy!
