Savory oatmeal is a simple one-pot meal that features vegetables, a few spices, and spinach, making it perfect for lunch or dinner. It’s warm, comforting, and absolutely delicious!
In this recipe, I used chopped carrots, green peas, and fresh, locally-grown spinach. Feel free to add your favorite vegetables and leafy greens.
I have used sprouted rolled oats from One Degree Organic Foods, which is my absolute favorite. However, you can choose any type of oats you like—steel cut, rolled, or instant. Steel-cut oats take the longest to cook, about 20-30 minutes, to achieve a chewy texture. Rolled or old-fashioned oats need about 10-15 minutes for a softer texture, while instant oats cook in just 2-3 minutes to become soft and creamy.
Since the flavor is mild, this recipe is great for kids as well. I hope you try it and enjoy it as much as we do!
Healthy One-Pot Savory Oatmeal with Vegetables
Ingredients
- 1/2 cup sprouted rolled oats
- 1 tbsp freshly pounded flaxseed powder
- 1 cup vegetables (chopped carrots, green peas)
- a pinch of grated ginger
- 1/8 tsp turmeric powder
- crushed black pepper to taste
- salt
- 1/2 tsp cumin powder
- 2 cups water
- 1 cup chopped spinach
Instructions
- Add oats, flaxseed powder, veggies, turmeric and cumin powder, black pepper powder and salt, and water into a saucepan. Stir and cook on medium-low heat until oats and veggies are cooked, while stirring frequently.
- Add spinach and cook for another minute or two.
- Serve (include boiled eggs topped with toasted sesame seeds if you desire) and enjoy!
