Quinoa Patties in the Air Fryer

Air Fryer Quinoa Patties

I usually have some cooked quinoa hanging out in the fridge, which I love tossing into salad bowls or pairing with curries for a quick lunch or dinner.

Recently, I turned that leftover quinoa into these quinoa patties, and they came out so delicious. Everyone at home enjoyed them, even my toddler. They’re made with cooked quinoa, finely chopped onions, tomatoes, spinach, chickpea flour to bind everything together, spices for flavor, ghee for healthy fats, and a squeeze of lemon for a bright, tangy kick.

They’re mildly spicy, packed with nutrition, and incredibly easy to make in the air fryer! (Use my code SWAADISTA10 for 10% off on this amazing glass air fryer which I use)

Ingredients:

Quinoa – use white or mixed quinoa; leftover or freshly cooked both work well.

Onions – any finely chopped onions will do—red, yellow, or white.

Grape tomatoes – you can use any type of tomatoes; I used grape tomatoes because that’s what I had on hand.

Spinach – freshly chopped spinach, and the more the better. You can also mix in finely chopped kale, fenugreek leaves, or chard.

Besan or chickpea flour – adds binding and a nice, nutty flavor.

Spices – you will need salt, Kashmiri red chili powder, and roasted cumin powder.

Lemon – use lemon or lime for drizzling over the quinoa patties.

Ghee – you’ll need ghee to brush over the quinoa patties while air-frying or right after they’re done. Any ghee works; I used A2 organic ghee .
