If you have been following me for a while, you know that I love lazy and easy rice cooker meals. This is one such simple and nutrient-dense recipe for upma, which is made using quinoa, green peas, a few spices for flavor, cashews and peanuts for crunch, and grated coconut for added flavor.
To turn it into a wholesome meal, consider adding a variety of roasted vegetables and a tablespoon of Greek yogurt on the side.
This dish is perfect for weekend breakfasts or weekday lunch boxes for both kids and adults. You can also add more vegetables, such as chopped green beans or grated carrots, and even a handful of spinach to boost the fiber content.

Quinoa Upma in Rice Cooker
Ingredients
- 1 tbsp ghee
- 1/4 tsp mustard seeds
- 1/4 tsp cumin seeds
- a few cashews
- a few curry leaves
- 1 tsp grated ginger
- finely chopped green chilies to taste
- 1/8 tsp turmeric powder
- salt to taste
- 3/4 cup frozen or fresh green peas (add other veggies if desired)
- 1/2 cup quinoa rinsed thoroughly
- 1 1/2 cups water
- 2 tbsp grated coconut
- some chopped coriander leaves
For Garnish
- Grated coconut
- Fried or roasted peanuts
- Lemon juice
Instructions
- Switch on the Rice Cooker.
- Add ghee, mustard and cumin seeds, cashews, and curry leaves into the rice cooker. Sauté until cashews are light brown.
- Then add ginger, green chilies, & onion. Sauté the onion for a couple of minutes and add turmeric powder and salt.
- Add green peas, quinoa, water, coconut, & coriander leaves.
- Mix well and taste for salt. Adjust if necessary. Then cover and cook until done.
- Garnish with shredded coconut, peanuts, & a generous drizzle of lemon juice. Serve and enjoy!

Notes
- Feel free to add more vegetables, such as chopped green beans and chopped carrots, if you prefer.
- To create a wholesome meal, consider serving some roasted vegetables on the side with a tablespoon or more of Greek yogurt.
