Green Beans Palya (Stir fry)

Green beans are one of our favorite vegetables. I love them for their versatility; they could be eaten raw, steamed, boiled, stir-fried (just like in this recipe), or even added into full Indian meals like upma, pulao, biryani, and vegetable sambar. This recipe of Green beans palya or green beans stir-fry is a healthy and simple dish made with green beans, onions, mustard seeds, split chickpeas, onions, coconut, and herbs. The addition of grated coconut elevates the flavor of this dish. But if you are not a fan of coconut, you can skip it.
Eat this as is or pair it with rotis/chapatis or rice-sambar to make a complete meal, and enjoy it on a weekday for lunch or dinner. Continue reading to know how to make this healthy and yummy green beans palya.
Prep time: 10 minutes
Cook time: 20 minutes
Yield: 2 adult servings
Ingredients:
250g of green beans, cut into 1-inch pieces
3 tablespoons of vegetable oil
1/2 teaspoon mustard seeds
1 teaspoon of chana dal
2 green chilies, slit into half
8-10 curry leaves
1 small red onion, chopped
3-4 tablespoons of grated coconut
Salt to taste
Procedure:
- Heat oil in a cooking pan.
Add mustard seeds, and allow them to pop.
Add chana dal and fry them on low heat until golden brown. - Add curry leaves, green chilies and red onions and sauté until onions turn translucent.


- Add the chopped green beans into the pan, sprinkle salt over them and sauté for a minute or two. Then cover and cook them for 8-10 minutes until beans cooked yet firm, while you stir them occasionally.
- Add grated coconut and stir fry for two to three minutes.


- Serve it warm with rotis or rice and dal. Enjoy!
