Easy Coconut Rice | Leftover Rice Recipe

Having leftover rice is not uncommon in households-be it homecooked or the extra rice we get with our takeouts from restaurants.
And we all know how much of it goes to waste.
Instead of discarding it, we can reuse it to make some delicious dishes; one such is coconut rice. It’s a simple, yummy recipe with minimal ingredients and less preparation.
Coconut rice is one of my favorite leftover rice recipes to make because it can be prepared in no time, especially on busy days, this recipe is everything. In this recipe, I have used leftover rice that we got from our takeout, which is slightly flavored with spices, but you could simply use plain cooked rice.
So the next time you have leftover rice, do not worry, simply make this easy-peasy 10-minute coconut rice and enjoy!
Easy Coconut Rice | Leftover Rice Recipe
Ingredients
- 1 cup cooked rice
- 4 tbsp. coconut oil
- ¼ tsp mustard seeds
- ½ tsp chana dal
- ¼ tsp urad dal
- 1 dried red chili
- a sprig of curry leaves
- 1 small red onion
- ½ cup shredded coconut
- ½ tsp black pepper powder
- Salt to taste
- 3 tsp peanuts fried in ghee
Instructions
- Heat oil in a skillet. on medium heat. Add mustard seeds and allow them to pop. Then fry chana dal and urad until golden brown. Break dried chili and add them, along with curry leaves.
- Add chopped onion and sautƩ until translucent, then add shredded coconut, leftover rice, salt to taste, and black pepper powder, and combine well.
- Add peanuts fried in ghee onto the rice and give everything a good mix.
