Heerekayi Palya | Ridge Gourd Stir-fry

Heerekayi palya is a specialty in Karnataka. It’s a side dish to eat with rice and sambar/dal or rasam and is made with ridge gourd, mustard seeds, dried red chili, turmeric, and coconut among other ingredients.

The recipe is simple and definitely achievable in under 30 minutes. Simply clean and chop the ridge gourd. Stir-fry it in oil along with mustard seeds, chana dal, urad dal, red chili, onion, and garlic until the ridge gourd is 90% cooked. Garnish it with shredded coconut and enjoy.

Simple and easy ridge gourd stir-fry with mustard seeds, dried red chili, turmeric and coconut.

Ingredients

  • 1 medium Ridge gourd cleaned and chopped to ¼ inch pieces
  • 3 tbsp. cooking oil
  • ¼ tsp mustard seeds
  • ¼ tsp chana dal
  • ¼ tsp urad dal
  • 1 dried red chili split into half
  • 1 clove garlic minced
  • a sprig of curry leaves
  • 1 small white onion chopped
  • ¼ tsp turmeric powder
  • 2 tbsp shredded coconut
  • salt to taste

Instructions

  • Heat cooking oil in a pan.
    Add mustard seeds and allow them to pop. Add chana dal and urad dal and fry them until golden brown.
  • Split and add dried red chili, minced garlic, and chopped onion. Saute until the chopped onion is translucent.
    Add turmeric powder and stir.
  • Transfer chopped ridge gourd, and sprinkle salt to taste over them. Stir, cover, and cook on low-medium heat for 5-6 minutes or until ridge gourd is 90% cooked while stirring occasionally.
  • Garnish with shredded coconut. Enjoy with rice and dal.
