Heerekayi Palya | Ridge Gourd Stir-fry

Heerekayi palya is a specialty dish from Karnataka. It is a stir-fried side dish made with ridge gourd (heerekayi), mustard seeds, dried red chili, turmeric powder, coconut, and a few other ingredients. Heerekayi palya is delicious and pairs wonderfully with rice, sambar, dal, rasam, and papad or happala.

This recipe is simple and can be completed in under 30 minutes. First, clean and chop the ridge gourd. Next, stir-fry it in oil with mustard seeds, chana dal, urad dal, red chili, onion, and garlic until the ridge gourd is about 90% cooked. Finally, garnish the dish with shredded coconut and enjoy!

Ingredients

  • 1 medium Ridge gourd (cleaned and chopped to ¼ inch pieces)
  • 3 tbsp. cooking oil
  • ¼ tsp mustard seeds
  • ¼ tsp chana dal
  • ¼ tsp urad dal
  • 1 dried red chili (split into half)
  • 1 clove garlic (minced)
  • a sprig of curry leaves
  • 1 small white onion (chopped)
  • ¼ tsp turmeric powder
  • 2 tbsp shredded coconut
  • salt to taste

Directions

  1. Prepare the Vegetables: Rinse, lightly scrape off the skin of ridge gourd, and chop it into 1/4 inch cubes. Then finely chop the white onion, and mince the garlic.
  2. Prepare the Seasoning: Heat cooking oil in a pan. Add mustard seeds and allow them to pop. Add chana dal and urad dal and fry them until golden brown. Add dried red chilies, minced garlic, and chopped onion. Sauté until the chopped onion is translucent. Add turmeric powder and stir.
  3. Sauté Ridge Gourd: Transfer chopped ridge gourd, and sprinkle salt to taste over it. Stir, cover, and cook on low to medium heat for 5-6 minutes. Stir occasionally until the ridge gourd is 90% cooked.
  4. Garnish and Serve: Garnish with shredded coconut and serve with rice and dal. Enjoy!
