If you’re looking for a protein-rich salad, this recipe is perfect for you. It’s delicious, juicy, crunchy, and ideal for a weekday summer lunch.

I love salads not only because they are refreshing and tasty, but also because they allow for easy experimentation and creativity. I generally choose a plant-based protein as the main ingredient and add in all the fresh vegetables I find in the refrigerator.

In this salad, I’ve used leftover quinoa and boiled edamame for protein, along with a variety of veggies, greens, nuts, and berries for fiber and added crunch. The dressing is a simple mix of olive oil, salt, pepper, lemon juice, garlic powder, green chilies (only if you enjoy extra heat), cumin powder, and honey.

Quinoa Edamame Salad

Quinoa Edamame Salad

Ingredients
  

  • 1 cup finely chopped kale
  • ½ cup cooked quinoa
  • ½ cup boiled edamame
  • ½ cup grated carrot
  • ¼ cup finely chopped onion
  • cup finely chopped tomatoes
  • a handful of chopped walnuts, pistachios, and goji berries
Dressing:
  • 2 tbsp olive oil
  • salt
  • black pepper powder
  • ¼ tsp garlic powder
  • ¼ tsp cumin powder
  • finely chopped green chilies to taste only if you prefer extra spicy/heat
  • a generous amount of lemon juice
  • 1 tsp honey if you prefer some extra sweetness

Method
 

  1. Add ingredients to mixing bowl: add chopped kale, cooked quinoa, boiled edamame, grated carrot, chopped onions, and tomatoes to a mixing bowl/plate.
  2. Prepare the dressing: In a small bowl, add olive oil, salt, black pepper powder, garlic powder, cumin powder, chopped green chilies, lemon juice, and honey.
    Mix the ingredients well.
  3. Combine and Serve: Pour the prepared dressing over the salad, then add chopped walnuts, pistachios, and goji berries, and gently toss the salad to combine. Enjoy!
