If you’re looking for a protein-rich salad, this recipe is perfect for you. It’s delicious, juicy, crunchy, and ideal for a weekday summer lunch.
I love salads not only because they are refreshing and tasty, but also because they allow for easy experimentation and creativity. I generally choose a plant-based protein as the main ingredient and add in all the fresh vegetables I find in the refrigerator.
In this salad, I’ve used leftover quinoa and boiled edamame for protein, along with a variety of veggies, greens, nuts, and berries for fiber and added crunch. The dressing is a simple mix of olive oil, salt, pepper, lemon juice, garlic powder, green chilies (only if you enjoy extra heat), cumin powder, and honey.
This recipe is also great for lunch boxes since it doesn’t make the salad soggy. I hope you try this recipe and enjoy it! Don’t forget to leave a comment or tag me on Instagram @swaadista with your creations!
