Peanut Chutney- an oldie but a goodie, hence the reel.😋

It’s raining Idlis and dosas in here. Thanks to warmer temperatures, the batter ferments easily and incredibly well.🤩

Also, Peanut chutney is the very first recipe I learned from my mom. Her rave rotti with peanut chutney is my all-time favorite breakfast.
Can’t wait to eat it!😋

Here’s the peanut chutney recipe if you’d to try it:
Dry roast peanuts and dried red chili on low-medium heat until peanuts begin to crack and become light brown. Turn off the heat and allow them to cool.

Once cool, you could either remove the peanuts’ skin or use it with skin, which is what I always do.

Add peanuts, dried red chili, green chili, black peppercorns, cumin seeds, tamarind, cilantro, salt, and water as required into a blender and grind into a smooth paste.

Serve it with idli, dosa, or any kind of rotti. Enjoy!

If you are looking for a tasty and healthy side dish, try this recipe for RED CHARD AND HORSE GRAM STIR FRY!

Here’s how to make it:

1. Rinse and soak one cup of horse gram overnight. Drain and cook until tender.
2. Rinse and roughly chop 2 bunches of red chard.
3. Heat 2-3 tablespoons of oil in a skillet.
4. Add 1/2 teaspoon each of mustard seeds and cumin seeds, then sauté green chilies to taste, with the chopped chard, and salt until cooked.
5. Add the cooked horse gram, combine, and stir fry for 2-3 minutes.

Sweet potato fries 🍠😋 in Air Fryer - crispy on the outside, soft on the inside. A must-try for all fries lovers!!

Ingredients:
2 medium Japanese red sweet potatoes
Red chili powder to taste
1 tsp garlic powder
Crushed black pepper to taste
Salt to taste
2 tbsp olive oil
Finely chopped cilantro

How to:
🍠Wash, pat dry, and cut the sweet potatoes into medium-sized sticks as shown and put them into a mixing bowl
🍠Add red chili powder to taste, garlic powder, crushed black pepper, olive oil, and salt to taste. Toss to coat the sweet potato sticks evenly.
🍠Preheat the air fryer to 400F for 5min
🍠Add sweet potato sticks into the air fryer basket and air fry for 10-12 minutes at 400F, shaking the basket halfway through cooking
🍠Garnish with cilantro or parsley. Serve delicious sweet potato fries with your favorite dipping sauce. Enjoy!😋

🌱RED RICE BATTER

Remember the red rice paddu reel I posted a couple of weeks ago? It’s the same batter I use to make dosa as well and reaaaallly love the flavor (and fiber) red rice adds to these South Indian breakfast favorites.

Here’s how I make the batter if you would like to try.👇🏽

Ingredients:
1 cup red rice
1/4 cup split urad dal
2 tsp fenugreek seeds
1/2 tbsp salt

👉🏽Thoroughly rinse red rice, urad dal and fenugreek seeds and soak them in water for about 5 hours. Then drain and grind them into a smooth batter, adding as little water as possible.

👉🏽Transfer the batter to a bowl, and mix it well for 2-3 minutes. Cover it and let it ferment for 10-12 hours in a warm place.

*During colder temperatures, the batter may take longer to ferment and may not ferment well. So here's what I do - heat the oven at 100F for about 3 minutes until it becomes warm. Turn off and keep the (oven-safe) batter bowl inside, allowing the batter to ferment for 10-12 hours.

👉🏽Add salt to taste and mix it well. You may need to adjust the consistency by adding little water if necessary.

👉🏽Make dosa as usual or paddu or idly and enjoy them with your choice of side dish or chutney.

SAMOSA CHAAT, our yummy dinner from this past Saturday.

These are store-bought Samosas topped with homemade green peas masala and mint chutney, then some chopped onion, tomato, spicy besan mixture, coriander leaves, and thinly sliced beet.

This recipe for the *Green peas masala* is a must try. It reminds me of the Bengaluru Masala puri!🤤

Ingredients:(yield: 2-3 servings)
250g of frozen green peas  1 small potato, skin-peeled and diced  500ml water
3 tbsp cooking oil
1 medium red onion, finely chopped  1 large tomato, finely chopped 2 green chilies, finely chopped 1/4 tsp grated ginger
2-3 mint leaves
1 tsp black pepper powder  1/4 tsp turmeric powder 3/4 tsp red chili powder 1 tbsp coriander powder 1/2 tsp cumin powder 3/4 tsp garam masala 1 tsp chaat masala
Salt to taste
Water (to adjust consistency)

Heat oil in a pressure cooker. Add and sauté onion, tomato, ginger, green chilli and mint leaves until they come together to form a gravy with oil separating.

Then add all the powdered spices- turmeric, Red chili, coriander and cumin, garam masala, and chaat masala, and sauté for a couple of seconds.

Add green peas, potato, salt and water into the cooker and pressure cook until 3 whistles. Once the pressure releases, gently mash the green peas masala and adjust consistency and salt. Boil the masala for a couple of minutes until frothy.

I often make this majjige huli for our dinners either with ash gourd or okra. It’s light and so refreshing, especially during warmer temperatures. However, this was an attempt to use up the asparagus sitting in the refrigerator and staring at me for over a week. But I’m glad it turned out delicious. Save this reel and try it for yourself!😋

Ingredients:
15-20 asparagus, rinsed and cut into 1-inch lengths
3 tbsp cooking oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
2-3 dried red chilies
1/4 tsp grated ginger
A few Curry leaves
A Pinch of turmeric powder
2 cups of plain yogurt, whisked (you could add 1/2 cup of water while whisking if you prefer a slightly thin consistency)
Salt to taste

Heat oil in a cooking pot on medium heat. Add mustard and cumin seeds, and allow them to pop and sizzle. Add curry leaves, dried red chilies, and ginger.

Transfer asparagus into the pot, add salt and turmeric powder, sauté, cover, and cook on low-medium heat for 4-5 minutes or until asparagus tender. Turn off the heat and allow it to cool for a couple of minutes.

Pour the whisked yogurt and stir to combine. Serve with warm white rice with a side of pickles or dry vegetable curry. Enjoy!😋

Coconutty Tindora fry😋

If you love tindora you’ll love this easy tindora fry. It’s a flavorful side dish to your meal that can be prepared in under 30 minutes if you have the tindora prepped earlier.

Ingredients
15-20 tindora, ends cut off then cut into halves vertically
3 tbsp peanut oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/2 tsp urad dal
1/4 tsp turmeric powder
1 tsp red chili powder or as taste
1 tbsp tamarind pulp
Salt to taste
2 tbsp water
1/2 cup of grated coconut

➡️ Heat oil in a pan over low-medium heat.
➡️Add mustard and cumin seeds, and allow them to pop and sizzle. Then add urad dal and fry until light brown.
➡️Add turmeric and red chili powder, sauté, and transfer slit tindora into the pan. Sauté for a few seconds.
➡️Add tamarind pulp and salt. Stir to combine, cover and cook over low-medium heat for 15-20 minutes until the tindora is tender while stirring occasionally(and adding 1-2 tbsp of water if need be).
➡️Garnish with coconut and serve warm on the side of your meal. Enjoy!

Red Rice Paddu - Sooo yummy!🤤

🌱Red rice batter
1 cup red rice (@24mantraorganic )
1/4 cup split urad dal
2 tsp fenugreek seeds

👉🏽Soak all the above ingredients in water for about 5 hours. Drain and grind them into a smooth batter adding as little amount of water as possible.

👉🏽Transfer the batter into a bowl, and mix well for 2-3 minutes. Cover and let it ferment for 10-12 hours in a warm place.

👉🏽Then add salt to taste and combine.

You could make idly, dosa and paddu with this batter.

🌱For paddu:
👉🏽Combine red rice batter, cumin seeds, finely chopped onion, grated carrots, finely chopped green chilies, and chopped dill together.

👉🏽Cook them in paddu maker on low-medium heat for 3-4 minutes on each side. Enjoy with coconut chutney!

Ingredients
1 cup of sprouted green gram
1 cup of grated carrot
1/2 cup of soaked(overnight) peanuts
Chopped cilantro
Pink Salt to taste
Crushed Black paper
Juice of half of a small lime

Seasoning:
2 tbsp peanut oil
1/4 tsp mustard seeds
1/2 tsp urad dal
5-6 curry leaves

👉🏽Mix all the ingredients in a bowl
👉🏽Heat oil in a pan. Add mustard seeds, once they pop add urad dal, fry them until golden brown, then add curry leaves
👉🏽Pour the seasoning over salad. Toss and enjoy by itself or alongside a meal. Enjoy!😋

SAVORY OATS - nutritious and delicious breakfast/brunch 😋

Ingredients:
3/4 cup rolled oats
2 cups of water
2 tbsp cooking oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
A sprig of curry leaves
1/4 tsp grated ginger
Half a small onion, chopped
Half of a medium tomato, chopped
1/4 tsp turmeric powder
1 tsp red chili powder
1/2 cup of green peas
1/2 cup of diced carrots
Salt to taste

How to:
👉🏽Temper mustard seeds, cumin seeds, curry leaves and grated ginger in oil.
👉🏽Add and sauté onion until translucent, then add and cook tomato until soft.
👉🏽 Add carrots and green peas, sprinkle salt, add turmeric powder and red chili powder, sauté, cover and cook for 3-4 minutes.
👉🏽Add oats and water, combine and cover and cook for 6-7 minutes on medium heat.
👉🏽Serve warm as is or with plain yogurt. Enjoy!

Honestly, I did not know I would enjoy a curry without onion, garlic, and chilies until very recently.

So I learned that the most commonly used ingredients in cooking which are onion, garlic, hing, and green chilies are negative pranic foods, meaning they dull our nervous system and deprive us of vital energies. They are medicinal but need not be used in everyday cooking.

I made this cow peas-bottle gourd curry devoid of all the 4 ingredients mentioned above and it tasted light, and delicious. While I can’t avoid using these basic ingredients completely, I figured simple curries like this are certainly eatable. It would take some time more for us to get adjusted to this😄 but it’s totally doable over time!

Here’s a quick recipe if you want to give this positive pranic curry a try👇

Ingredients:
1 cup cowpeas, soaked overnight & drained
half of a small bottle of gourd, thinly diced
2 cups of water
2 tbsp peanut oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1/2 tbsp grated ginger
A few curry leaves
1/4 tsp turmeric powder
2 medium tomatoes, chopped
Salt to taste
Black pepper powder to taste
Cilantro
Half of a small lemon

👉🏽 Temper mustard seeds, cumin seeds, ginger, and curry leaves in oil as shown.
👉🏽Add turmeric powder, tomatoes, and salt. Cover and cook on medium heat until tomatoes are soft.
👉🏽Add and sauté black pepper, cowpeas, and bottle gourd for a couple of seconds.
👉🏽Pour water, add chopped cilantro, cover, and pressure cook until 2 or 3 whistles. Once the pressure releases naturally, gently mash the curry, taste, and adjust salt and pepper.
👉🏽Turn off and drizzle juice of half a lemon before serving
👉🏽Serve hot with rice!😋

🌱Malabar Spinach Dal🌱

Do you know of Malabar/Vine spinach? It’s a protein and other nutrients-rich green leafy vegetable popular in southern India. If you are from Karnataka, you’d know it as Basale Soppu.

This recipe is my go-to for any dal + green leafy vegetable combo. Pressure cooking saves a lot of time in the kitchen, making this delicious recipe easy and quick too.

Ingredients:
2 bunches of Malabar spinach, cleaned & roughly chopped (add stem too)
1 1/2 cups of toor dal, thoroughly rinsed
3 cups of water
1 small red onion, chopped
1 large tomato, chopped
1 small lime-sized tamarind
Green chilies to taste
1/2 tsp turmeric powder
2 cloves of garlic

Tempering:
3 tbsp cooking oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
A couple of curry leaves
A pinch of hing

How to:
👉🏽 Add all the ingredients into a pressure cooker and cook until 5 or 6 whistles. Allow the pressure to release naturally and lightly mash the cooked ingredients.
👉🏽Add salt and adjust consistency if necessary by adding water.
👉🏽Heat oil in a small pan on medium heat. Add mustard seeds, and cumin seeds, and allow them to pop & sizzle. Then add curry leaves and hing.
👉🏽Pour this seasoning over the dal and mix.
👉🏽Serve hot with rice or other cooked millets, with a dollop of ghee on top. Enjoy!

Breakfast/brunch Oats Porridge - quick, delicious, healthy and filling!

Ingredients
- 1/2 cup rolled oats
- 3/4 cup milk (any)
- 3/4 cup water
- 1 inch cinnamon
- 5-6 Black raisins
- 2 tbsp jaggery powder

Toppings
- blueberries
- almonds

How to:
🫐 Add oats, water, and milk to a pot.

🫐Cook oats on medium heat while frequently stirring for 6-7 minutes. Halfway through, add cinnamon, raisins, and jaggery. If the porridge becomes too thick add warm milk/water as required.

🫐Transfer to a bowl and add the toppings of your choice. Enjoy!😋
