Pav Bhaji

Pav Bhaji is one of the most loved street/fast food in India. It is essentially a thick, mixed vegetable curry served with toasted bread, chopped onions, and lime on the side. Preparing this meal at home takes about an hour overall as it involves cooking vegetables first, then making a thick curry. However, if done parallelly, the dish takes about 45 minutes to get done.

Generally served as an evening snack, Pav Bhaji is quite filling. So, one could eat it as a whole meal for lunch or dinner as well. Continue reading to know how to make yummy Indian street food – Pav Bhaji.

Prep time: 15 minutes
Cook time: 30 minutes
Yield: 2-3 servings

Ingredients:

6 pieces of pav(bread)
2 medium Russet potatoes, rinsed, skin-peeled and diced
200g of green peas, frozen or fresh
150g of carrot, diced
3 tablespoons of unsalted butter
½ teaspoon of cumin seeds
1 medium red onion, finely chopped
1 tablespoon of ginger-garlic paste
2 medium tomatoes, finely chopped
¼ teaspoon turmeric powder
1 teaspoon red chili powder
½ tablespoon coriander powder
¾ teaspoon cumin powder
1 teaspoon of pav bhaji masala powder
3 tablespoons of cilantro, finely chopped
Water
Salt to taste

Procedure:

  1. Into a pressure cooker, add potatoes, carrot, and green peas with a pinch of salt. Pour enough water to cook and pressure cook them until well-cooked. Turn off and allow the pressure to release naturally.
  2. Meanwhile, heat butter in a saucepan on medium heat.
  3. Add cumin seeds, and allow them to sizzle.
  4. Add onions and sauté until translucent.
  5. Add the ginger-garlic paste and sauté until no raw smell exists.
  6. Add tomatoes, sprinkle some salt over them, cover and cook on low heat until soft and mushy.
  7. Add turmeric powder, red chili powder, coriander powder, cumin powder, and the pav bhaji masala and sauté for 30 seconds to a minute on low heat, ensuring the powdered spices do not get burnt. By now, you will notice the oil releasing from the masala, which is an indication that the masala has cooked well.
  8. Mash the cooked vegetables well and transfer them into the saucepan. Then, if necessary, add water to adjust consistency and cook on low heat until the vegetables and the masala come together.
  9. Mash occasionally to get a smooth bhaji.
  10. Taste for salt and adjust if necessary.
  11. Garnish with cilantro and turn off the heat.
  1. For the pav/bread – Grease a pan with butter and heat it. Toast the pav or bread until golden brown. 
  2. Serve pav bhaji as shown below with chopped onion and lime on the side. Enjoy!

Note:

  • Add salt and all the spices according to your taste and preference.
  • If you do not have the Pav bhaji Masala, use any vegetarian curry powder available at home.
